Chocolate & Mint Cookies

100 grams soft butter

150 grams soft light brown sugar

1 teaspoon vanilla extract

1/2 teaspoon peppermint extract

1 large egg

150 grams plain flour

35 grams cocoa powder

½ teaspoon baking powder

150-200 grams dark chocolate chips

1. Combine Butter and brown sugar together

2. Add egg and extracts and mix well until smooth paste

3. Mix together Flour, Cocoa powder and baking powder then add in paste mixture and mix well

4. Finally pour in the chocolate chips and mix

5. Line a tray with greaseproof paper to prevent sticking

6. With a dessert/table spoon scoop mixture onto tray, leaving space between cookies

7. Preheat oven to 180 deg and cook for approx 15 mins

8. transfer to wire rack and leave to cool.

Lovely after dinner cookies with coffee.
