Start with the folloiwng:-
Serves 2 – Chicken & Chirizo
140g of long grain and wild rice
1 chopped onion
1 Handful of frozen peas
1 red or yellow pepper diced
chilli to taste – I use 1 red diced
80g of chirizo – chopped or sliced
350ml of veg or chicken stock
2 pinch of Saffron
2 chicken breasts – cut into chunks
2 tablespoons of olive oil for coating chicken
Paprika to coat chicken to add extra flavour
*Put all in a baking dish approx 20cm x 15cm diameter or as near – except for chicken, once you have poured in the stock cover with aluminium
foil and place on shelf level 1.
*Once chicken is coated place chicken in seperate dish and place on shelf level 3 – uncovered.
*Switch oven on and select auto programmes and scroll along to Paella setting.
45 mins later take off tin foil and add the chicken then serve……Perfect Paella.
Option to change chicken and chirizo to Seafood:-
1 pack of frozen seafood mix
use fish stock
Put ALL ingredients into baking tin and cover with aluminium foil. Cook and serve straight away.
